Your total costs include: the cost of the beef (per pound, hanging weight) and the cost of harvesting: a flat fee (typically $100 per whole beef) plus cutting and packaging cost (typically less than $1 per pound). [Specialty cutting for stew meat or processing for jerky can result in additional costs.]
You can expect to spend less than $9/lb. total on our free-range, grass-fed beef after packaging.

Compare this to hamburger sold in corporate supermarkets that averages $7-8/lb. and is sourced from cattle raised in massive feedlots, given steroids and hormones, and fed pesticide-covered grains.
Also consider that buying an individual, grass-fed and free-range-sourced Ribeye steak would cost about $20/lb.

Our steers are ready to harvest when they are about 1200-1300 lbs. and are typically between 18 and 24 months old. If you'd like to pickup the animal from our farm and organize the harvest yourself, that option is available, just Contact Us.
Otherwise, we schedule the harvest with a local butcher, with whom you specify what cuts of meat you prefer (steaks, roasts, stew meat, and hamburger OR only steaks and hamburger, for example). You also specify if you want to keep soup bones and organs such as the liver and heart. After the animal is dressed, the remaining meat and bones are dry aged for 10-15 days before they are packaged and ready for pickup.
The "hanging weight" (after the beef is dressed) is what is typically measured and used for sale price calculations. This is generally about 62% of the live weight of the animal. After the removal of excess fat and bones, the beef is dry aged, and the final packaged meat weighs about 65% of the hanging weight.
A WHOLE beef that weighs around 1200-1300 lbs. on the hoof [~750 lbs. hanging weight] yields ~500 lbs. of meat. With soup bones, excess fat that can be turned into tallow, and organs such as the heart and liver, you can expect about 550 lbs. of high-quality, ethically and naturally-raised and harvested beef.
If you buy ONE HALF of one 1250 lb. steer you can expect (approximately, on the low end):

>50 pounds of roasts and steaks
